Ingredients:
1 Pound of Organic Chicken Liver
Half red onion
1/4 cup fresh parsley
1 tsp dill
1 tsp thyme
1 TBSP olive oil
Salt and pepper
5 Tbsp of water
Instructions:
Chop red onion and fresh parsley.
In a small skillet add 5 tbsp of water and chopped red onion on medium heat until water evaporates -around 10 mins. Once cooked turn off heat and set aside.
Wash the chicken livers in a strainer. Pat them all dry in paper towel. Place in a bowl and add 1 tsp of salt, mix it in with your hands.
In another skillet on low heat add olive oil and chicken livers. ** I cook the liver to have it a little rare inside** Please cook it however long you desire, rare or cooked all the way through.
Once done cooking allow the liver to cool down a little.
Once they are warm to the touch add to food processor with the cooked red onions, parsley, thyme, dill, pinch of salt and pepper to taste. Process until creamy texture. **make sure to scrape the sides down mid way this makes sure everything gets processed**
Depended on how long you cook the liver the texture and taste will be different. If it's on the rare side it will have a thin gelatinous/smooth texture and more cooked will make a thick smooth texture.
Serves nicely as a dip with veggies, bread or crackers.
